Enjoy my second episode of Chef with a Steth. This week is a French detour to the seaside with some delicious mussels. Recipe below:
Ingredients:
– 2 lbs of mussels
– 1 leek, sliced
– 1 shallot, sliced
– 4 cloves of garlic, sliced
– 2 tbsp of butter
– 2 bay leaves
– 1 cup of dry white wine
– 3 tbsps of homemade mayonnaise
– 3 tbsps of chopped fresh parsley
– zest and juice of one lemon
– salt and pepper
Instructions:
1. Heat up 1 tbsp of butter in your pan on medium-low.
2. Once heated up, add your shallots, leeks, garlic, bay leaves, salt and a healthy bit of pepper and cook for about 10 minutes until tender and sweated out.
3. Now add your white wine and bring to a boil and let reduce for about two minutes.
4. Once reduced, add your mussels and cook until they are all opened. Cover the pan and shake often while cooking to distribute the mussels evenly.
5. Take out your mussels and add your mayonnaise, parsley, lemon juice and zest and whisk around and cook for a minute.
6. Once done add the mussels back into the pan and mix around. Serve and enjoy.
