French Toast Casserole | Easy Recipes
These amazing healthy french toast casserole are flavored with vanilla and coconut! They’re healthy, perfect for fall and easy to meal prep!
* 400g/14oz whole grain bread -OR-thick bread of your choice
* 1 cup coconut milk -OR-dairy milk
* 3 eggs
* 2 tbsp honey -OR- pure maple syrup
* 1/2 tsp vanilla
Garnish
1. Pure maple syrup
2. Coconut yoghurt –OR– yoghurt of your choice
3. Fresh strawberries
4. Flaked or shredded coconut (optional)
Instructions
* Chop the bread into cubes and add to a bowl.
* Beat together the milk, eggs, honey, and vanilla. Pour over the bread cubes and fold together.
* Put in a baking dish
* Bake at 350ºF / 180 C for 35 minutes.
* Serve with yoghurt, pure maple syrup, fresh strawberries, and coconut flakes (optional).
