Ingredients
6 Pieces of Bread
2 Bananas Peeled and cut into pieces
100 gms of grated coconut (coarsely ground almonds can be used if coconut is unavailable)
One third cup of sugar
2 Eggs
50 ml of oil.
Preparation.
Heat the pan and pour in 10 ml of oil. Put in the banana pieces,grated coconut and sugar and saute for 6 to 8 minutes and take off the flame.Take a piece of bread and cut off the brown edges with a knife. Flatten out the resulting bread piece with a rolling pin util we get a nice sheet. Break two eggs in a bowl and mix the white and the yellows thoroughly. Into the flattened bread piece put in a little bit of the banana coconut mixture and apply the egg mixture to both sides of the bread piece. Roll the bread piece with the banana mixture into a roll. Do this with all the bread pieces. Dip all the rolls in the egg mixture . Heat 50 ml of oil in a pan and fry all the rolls in the oil by turning from side to side for 4 to 5 minutes and take off the pan and serve
