If we were to describe what French Canadian Pea Soup is in one sentence it would be as follows: “The most amazing comfort food in a bowl packed with flavour and to die for goodness”. This soup is so hearty that you will be wondering if it would be possible to eat it with a fork. In this video we broke away for tradition by cooking our French Canadian Pea Soup on the Grill. It worked and it was incredible.

The entire process requires a ham bone and cubed ham. A couple weeks prior we brined and smoked a pork shoulder roast to make a bone in homemade ham. You can see the video here: . There is no need to tell you how quickly this ham was eaten but prior to it being fully consumed we pulled off a couple of chunks of meat and cubed it in small pieces. The bone was then boiled for a couple of hours to create our ham stock which formed the basis of this soup.

Care for this French Canadian Pea Soup on the Grill recipe? Well here it is:

INGREDIENTS
1 smoked ham bone to make 10 cups of ham stock
2-3 cups of chopped leftover smoked ham meat
4 cups of no salt added chicken stock
3 bay leaves
2 tsp marjoram
2 tsp celery salt
1 tsp black pepper
2 large carrots diced into small cubes no larger than 1/4″ x 1/4″
2 large garlic cloves minced
1 large diced onion
3-1/4 cup whole dried peas
1/4 cup dry split peas
3-4 tbs Canola oil

DIRECTIONS
Boil your smoked ham bone to make 10 cups of ham stock
Start your Traeger pellet grill and set to max
Once max temp is reached (450ºF) put a large stainless steel pot on the grill and let it get hot
Once pot is heated add the Canola Oil
Add the diced carrots and cook them for about 10 minutes or so
Add the diced onions and the minced garlic and cook until onions are translucent and garlic is aromatic
Once that is accomplished had the diced smoked ham to the pot and cook for about 2-3 minutes
Add the dried peas to the mix, close the lid and let it heat up for a few minutes
Add the Marjoram
Add the celery salt
Add the Bay Leaves
Add the black pepper
Close lid and heat it up for a few minutes
Add the ham stock to the pot
Add the chicken stock to the pot
Mix everything real well and close lid to let it cook for 4-5 hours or more if needed
Once in a while open the lid and gently stir the soup.
After 5 hours test peas if they have become somewhat tender with a slight crunch to them and the soup as thickened a bit.
If satisfied remove from heat and bring the soup into the dining room
Serve piping hot and be amazed.
