Main ingredient:
800 g boneless beef chuck, cut into 4 cm (1.6 in) cubes (braise for 3 hours/ 130.C)
salt and black pepper
125 g flour

olive oil

Braising ingredients:
1 large onion, chopped
2 medium carrots, chopped
2 celery stalks, chopped
20 g tomato purée
3 garlic cloves, cut in half
1 bay leaf
6 sprigs parsley
1 sprig thyme

750 ml red wine
500 ml beef stock
250 ml water

Garnish:
Potatoes
Mushrooms
Carrot rools

Ingrediente principal:
800 g de mandril desossado, cortado em cubos de 4 cm
sal e pimenta do reino
125 g de farinha

azeite

Ingredientes para refogar:
1 cebola grande picada
2 cenouras médias picadas
2 talos de aipo picados
20 g de purê de tomate
3 dentes de alho cortados ao meio
1 folha de louro
6 raminhos de salsa
1 raminho de tomilho

750 ml de vinho tinto
500 ml de caldo de carne
250 ml de água


Guarnição, enfeite, adorno:
Batatas
Cogumelos
Rolinhos de cenoura
