This is one of my favorite ways to roast chicken. It is easy to cook. It presents well on the table but more importantly, it is delicious. I always think this is loosely the French counterpart of our Filipino Adobong Puti. Where no soy sauce is used, just vinegar , garlic and salt sans the wine. But of course this roasted chicken has a different flavor profile, wine just makes flavorful sauce 🙂 Give it a try.
