Cipes Brut NV – Summerhill’s “house style”. Winning gold every year since first made in 1991, Cipes Brut has helped define Canadian sparkling wine. It is made in the traditional method, but out of somewhat untraditional grape varieties – Riesling, Chardonnay, and Pinot Blanc. We allow this wine to age on the lees only for one to two years, so that the fruit is the dominant character of the wine, with the autolytic character (the baked-goods like notes imparted by the yeast cells breaking down inside the bottle) providing a rich, complex background.

Cipes Blanc de Blanc 2012 – Made of 100% organic Chardonnay and aged on the lees for 6 years before disgorgement, this is a classic style that has extraordinary finesse and elegance when made in the Okanagan Valley. Here the autolytic character shares equal billing with the subtle apple and citrus notes of the Chardonnay. The bubbles get creamier and the mouthfeel richer from the extended aging period. Cipes Ariel 2000 – An homage to the great wines of Champagne, France, this traditional method sparkling wine is blended from the three great grapes of that region – Pinot Noir, Chardonnay, and Pinot Meunier. Cipes Ariel is estate grown at Summerhill Vineyard in Kelowna, BC. Our vineyard is especially well suited for growing sparkling wine grapes. The grapes were harvested so that the wine would have the necessary structure to mature for years on the lees before release. Finally released in February of 2020, Cipes Ariel 2000 represents a culmination of the potential of our vineyard to create superlative, world renowned wines. Experience the luxurious, soft, creamy bubbles and mouthfeel, and the rich autolytic character in harmony with the fresh, bright, lively citrus and fresh fruit notes that have withstood the test of time.
