Ingredients:
– 2 lbs baby potatoes
– 1 stick unsalted European butter or 1 and 1/2 sticks American butter
– Fleur de Sel, Maldon, or kosher salt
– 2 sprigs thyme
– 1 sprig rosemary
– 2 garlic cloves (peeled)
– chives (for garnish)
Dipping Sauce
– 1 cup sour cream, creme fraiche, or full fat greek yogurt
– 1/2 tsp onion powder
– kosher salt
– 4 tablespoons whole milk
– chives
