These veggie burgers are hearty, full of flavour, and satisfying for everyone whether you are vegan, vegetarians, a meat-eater or a cat! The oven roasted fries are bursting with flavour and are both crispy and juicy.
Mushroom, lentil, and walnut veggie burgers from Food52
Ingredients:
2 teaspoons olive oil
1 1/2 cups chopped onion
4 cups cremini mushrooms
3 cloves garlic, minced
1 tablespoon chopped fresh thyme, or 2 teaspoon dried
2 teaspoons chopped fresh oregano, or 1 teaspoon dried
1/2 cup pecans or walnuts
1 cup cooked lentils
2 tablespoons tamari or soy sauce
1 tablespoon miso
1 1/2 cups breadcrumbs
black pepper
1. Heat the olive oil over medium heat in a large skillet. Add the onions and saute until light brown, about 8 minutes. Add the mushrooms, garlic, thyme , and oregano and saute until the mushrooms are cooked, about 5 minutes. Remove from heat.
2. Put the pecans or walnuts in a food processor and pulse until finely ground. Add the mushroom mixture, lentils, tamari, and miso. Pulse until combined but with some texture remaining.
3. Transfer the mixture to a large bowl and add the breadcrumbs. Season with salt and pepper. Taste and adjust the seasoning.
4. Shape the mixture into 4-6 patties.
5. Bake the burgers on a oiled baking sheet at 375 for 15 minutes, then flip and bake for another 15 minutes or until brown. Alternatively, fry the burgers in a skillet until browned and crisp on both sides.
6. Serve hot with your favourite burger toppings.
Oven roasted french fries, inspired by All Recipes
Ingredients:
4 potatoes
2 tablespoons vegetable oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon chili powder
1. Preheat the oven to 450F
2. Cut the potatoes into wedges and place on baking sheet. Mix all other ingredients. Coat potatoes with oil-spice mix.
3. Bake until golden brown and crispy, stirring once or twice, about 40 minutes.
