this is such a rewarding soup to make and a classic you never forget.
recipe
1 kilo of white onions
4 tbsp olive oil
2 tbsp flour
good splash of brandy (optional)
1/2 glass white wine
2 beef stock cubes in 2 litres of hot water
salt and pepper to taste
cook the onion in oil for as long as you can, this will draw out more sugars to caramelise and add flavour, colour and sweetness.
you can use a good homemade beef stock instead of cubes but make sure you use beef as that is what this soup is all about.
