Sous Vide at 131.5 degrees for 3 hours, pat dry and sear – let rest for 3 min before slicing against the grain – for the perfect medium-rare.

Correction on the aging details – the wine spends 14 months in new French Oak, and then 12 months in the bottle – vinification is done in concrete containers.
