In Chapter 5 Webisode 11 we show you how REAL MAPLE SYRUP is made at an authentic Sugar Shack in rural Quebec, Canada. We stopped at this Boondockers Welcome location between Trois-Rivieres and Quebec City. We thought we would have a free, safe and nice place to stay but what we really got was a full education on how Maple Syrup is harvested and processed into syrup, sugar and maple butter. The Sugar Shack owner took us through the entire process from tapping the trees, piping the sugar water to the sugar shack, the reservoir system, the reverse osmosis system, to boiling the sap from a 2-3% concentration, to 10% to 66% concentration which is considered maple syrup. Then the owner of Erabliere Lemay & fils taught us how to do a Maple Syrup Tasting, similar to a wine tasting just way sweeter. We learned about the difference in taste between maple syrup harvested on Day 1, Day 4, Day 14 and Day 17 of last years harvest which runs between the beginning of March and the end of April. He also had us taste the granulated sugar and Maple Butter products. We Loved the Maple Butter. We were nestled under the falling leaves of the beautiful Maple trees with a gorgeous view of the pond and we had learned so much at this Boondockers Welcome stop.
