A quick video recipe on how to make yourself some TREAT YO SELF worthy Vegan French Toast Pancakes while you’re stuck at home during quarantine. Note that you can totally swap out ingredients and use different substitutes.

Ingredients:

2 cups Oat Flour (or any other flour)
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 tsp Cinnamon Powder
1/4 tsp Nutmeg

1/2 cup Vegetable Oil
1/2 cup Water
2 Small Bananas

1 1/4 cup Oat Milk (or any other milk)
1 tsp Lime Juice

Directions:

1) Mix all dry ingredients together.
2) Mix Oat Milk and Lime Juice and set aside for 5 minutes.
3) Blend Vegetable Oil and Water until emulsified, then add Bananas and blend again.
4) Incorporate dry and wet ingredients.
5) Let batter sit for 20 minutes.
6) Use 2 tbps of batter for each pancake and fry for around 2 minutes on each side.
7) Serve with Caramelized Bananas, Chocolate Ganache and chopped Hazelnuts.
