Quarantine Diary – Cooking Edition
Sharing an easy French chicken stew quarantine style. Most of the ingredients you probably have in your fridge pantry and bar 😊
Ingredients
4 oz chopped bacon
1 whole kosher chicken cut up, seasoned with salt and pepper or any cut up chicken. I only had frozen kosher chicken
1 whole onion chopped
4 pcs carrots chopped
2 T garlic minced
1 T salt
1 T pepper
350 ml red wine
1 1/2 C chicken broth, no salt (decrease your salt if you’re using salted broth)
1 T dried thyme or about 5 sprigs of fresh thyme
3 T butter, room temp softened divided into 3
1.5 T APF
4 oz pearl onions (half frozen package)
1 small can chopped mushrooms, if you have fresh even better
