Use this delicious recipe to whip up French style thick and decadent hot chocolate at home! And the best part, you can store the leftover in the fridge for upto one week!
Ingredients:
500g milk
7g dark unsweetened cocoa powder
120g dark chocolate 75%-80%
1 inch stick of cinnamon
15g sugar (only if using 75% chocolate or above)
A pinch of salt
Method:
1. In a heavy bottom pan, heat the milk together with cinnamon for about 5 minutes, till it reaches a boil.
2. Take the cinnamon out of the milk and add cocoa powder and sugar.
3. Stir to combine till lump-free, use a whisk if necessary.
4. Add the finely chopped dark chocolate along with a pinch of salt and mix to combine. You can switch off the flame at this point for about 2 mins and keep stirring to melt the chocolate.
5. Once the chocolate has melted, you can serve it right away. (or)
6. For a thicker and richer hot chocolate, heat the mix further till you get the desired thickness, with the gas on medium-low.
7. Serve with soft whipped cream and dust with some cocoa powder! Enjoy!
Tips:
– Use any good quality ‘couverture’ chocolate like Cocoa Barry, Callebaut, Van Houten, Ghirardelli, Lindt, Amul couverture chocolate, Mason and co! etc.
– Add sea salt before serving for added punch of flavour!
– If adding pink peppercorns, make sure to strain the hot chocolate mix before serving!
– You can adjust the sugar according to your preference, the recipe given yields a mildly sweet hot chocolate.
