This video shows how to make the classic French steak sauce; bearnaise sauce. This sauce is a rich emulsification of butter with aromatics (shallots, peppercorns, tarragon and chervil). It is a derivative of the French mother sauce – hollandaise sauce (link to hollandaise sauce video : It is great with steaks and with vegetables.

Ingredients:
– 50ml white wine vinegar
– 50ml white wine
– 20g shallots
– 1 tbsp tarragon (stems if you are using fresh tarragon- however leaves will work)
– 1 tbsp chervil (stems if you are using fresh chervil- however leaves will work)
– 1 pinch of peppercorns crushed
– 4 egg yolks
– 4 tbsp or 50ml water
– 12.5 tbsp or 180g butter clarified

To finish:
– 1 tbsp tarragon leaves
– 1 tbsp chervil leaves
