Ingredients;
200ml Red Wine
Olive Oil
1 x Diced Onion
2 Garlic Cloves chopped
100g Sliced Mushrooms
250g Beef Rump strips
2 Tbsp French Mustard
140ml Pouring Cream
2 Tbsp Tomato puree
300ml Beef Stock
Chopped Parsley
50g Sliced Gherkins
Method;
Heat the pan, saute onions and garlic until golden
Add Rump strips and saute until cooked on all sides
Add mushrooms
Add tomato puree and cook out for a few minutes
Add red wine and bring to the boil
Add beef stock, bring to the boil and simmer for 20 minutes
Add french mustard, gherkins and simmer for a 20 minutes
Stir in chopped parsley
Add cream just before serving
Serve with basmati rice
