Plant-based, gluten-free French Onion Soup

This french onion soup recipe pairs very nicely with our mozzarella cheese video. It is completely plant based, gluten-free and simply delicious. It is perfect for a chilly day luncheon with friends or great for supper with your family with an accompanying salad. Give it a try! You will not be disappointed.

Recipe:
4 medium sweet onions, caramelized in a hot pot for 15-20 minutes, (no oil).
Add 4 TBSP garlic, 1 TBSP Thyme and stir til mixed together, a minute or so.
Add 3/4 cup red wine and stir and cook for 15 minutes. Add 2 TBSP of Pamela’s baking mix, stir til dissolved. Add 2 bay leaves and 2 quarts veggie broth. Salt and pepper to taste. Cook for 15-20 more minutes. Ladell into crocks, put homemade bread crumbs and mozzarella cheese on top and broil for 5 minutes, until browning. Serve hot and enjoy!
