Roasted Tomato Soup

The best way to use fresh tomatoes with garlic, onions, olive oil and basil leaves to make a delicious soup recipe for dinner
Ingredients
Tomatoes 10 – 12 no
Onion 2 no
Garlic 8 – 10 cloves
Olive oil 1 tbsp
Salt to taste
Pepper to taste
Vegetable broth 1 cube
Mixed herbs 1 tsp
Italian basil leaves a few
French baguette
Method
First cut the tomatoes into halves and onions into quarters, transfer them into an oven tray
Add in garlic and drizzle some olive oil over it
Add in some salt, pepper, mixed herbs and bake it in the oven for one hour at 160 degrees
Add the baked mixture into a pan, add water, a cube of vegetable broth, Italian basil leaves and boil
Now add the French baguette, some salt and pepper
Turn off the flame and puree the mixture using a blender
Roasted tomato soup is ready to serve
