Ingredients :
For Dough
32 oz French Flour Shipton Mill
20 oz Water more or less
0. 5 oz Salt
Dough Starter 16 oz ( This is a pre made dough Starter, Video links below over 5 days How to make Sourdough Starter. )
To Make 4 small Loafs by 3 speed Machine
1. Add water into a clean bowl, then add in starter mix round with hook, add in flour
2. Put on machine and mix on 1st speed 1 min, add in salt then mix for 9 mins on 1st speed until firm dough, adding more water as required.
3. Should be elastic dough. ( Test )
4. Place the dough in a bowl & cover and put in a warm place until the dough doubles it’s size (around 7 hours can be longer if cold).
7. Knock back gently by Stretching and folding, rest the dough for around 30 mins to recover ( may take longer if cold)
6. Remove the dough from the bowl and now you can start cutting up into 4 x 16 oz loafs. Place what is left of dough in a bowl, cover and place in the ‘fridge. This piece of dough will be the starter for your next loaf.
7. Knead the 4 dough pieces gently .
8. Place dough into bread tins or proving baskets and cover with clean cloth, and put in a warm place until the dough has doubled in size (around 4 hours) could take up to 7 hours
9. Turn the dough out onto a floured baking sheet. Make a few cuts in the dough and then dust the loaf with flour. ( you can put some seeds on the top before baking looks cool )
10. Bake in a oven at a higher Temperature (450°F) turn off your oven and let it cooling down for 25-35 minutes.( do not open the oven door for 20 mins) If the bread makes a dull sound when tapped then it is cooked.
11. Allow the bread to cool on a wire rack before slicing.
Tip ! put a small bowl of hot water into oven with loafs
