Today’s recipe is Mixed “VEGETABLE CUTLETS”. This is a very popular evening snack recipe. Crispy from out, flavorful inside. I have used vegetables like boiled potatoes, sweet corn, green peas, french beans and carrots etc. You may also add beetroot if you like. To make it more spicy you may add red chilli powder. Ingredients to make Mixed Vegetable Cutlets:

Potatoes – 8 nos
Carrots – 3 nos
Green peas – 1½ cup
Sweet corn – 1 kernel
Onions finely chopped – 4 nos
French beans finely chopped – 2 cups
Coriander leaves finely chopped – 8 tbsp
Curry leaves finely chopped – 4 tbsp
Green chillies – 6 nos
Ginger & garlic paste – 2 tbsp
Lemon juice – 2 tbsp
Turmeric powder – ½ tsp
Pepper powder – 1 tbsp
Cumin powder – 2 tsp
Cinnamon, cloves & cardamom powder – ¼ tsp
Garam masala – ½ tsp
Salt as per taste
Eggs – 3 nos
Bread crumbs / rusk powder – 7 cups
Oil for frying
