With St. Patrick’s Day fast approaching, I can’t think of any better recipe than my Irish Onion Soup with Guinness along with some homemade Irish Soda Bread! Both incredibly easy and guaranteed to have Irish eyes smiling!
Ingredients:
2 tbsp butter
3 large onions, thinly sliced
2 tbsp plain flour
1 tbsp thyme leaves
2 tbsp light brown muscovado sugar
1 x 300ml (10 fl oz) Irish stout
500ml (16 fl oz) beef stock
Small handful parsley, chopped
For the cheddar soda bread:
100g (3.5oz) wholegrain flour
375g (13oz) plain flour
1 tsp bicarbonate of soda
200g (7oz) mature cheddar, grated
1 tbsp thyme leaves, chopped
350ml (12 fl oz) buttermilk
1 large free-range egg
Pinch sea salt flakes
