For Montreal en Lumiere 2020, H4C par Dany Bolduc brought guest Michelin Chef Phillip Foss from El Ideas in Chicago an exclusive tasting menu and wine pairing called “a chef and his graphic novel” based on his new graphic novel “Life of El” made with his cousin Timothy Foss.
Tasting menu curated by Chef Phillip and Joshua with wine pairing by sommelier Jonathan Benchetrit. Tasting menu features innovative take on classic comfort food we used to grow up in.
One of the most popular dishes from El Ideas was showcased in the tasting menu: French Fries and Frosty which uses liquid nitrogen on potato leek soup with fries. This molecular gastronomy dish was inspired by the popular kids snack of dipping fries in ice cream or milkshake.
