Day 7 Ferments are nearing their end. Sugar has almost been consumed and it’s time to think about next steps and getting some wine into barrel. We’re going to fill off 1 barrel for tomorrow for a mini-barrel fermentation and then macerate the rest of the wine on skins post fermentation for a while.
All this means it’s time to prepare our oak, make sure it’s sound and has no leaks!
