I just put in a new range and… I can tell this setup isn’t right, I just can’t quite figure out what to do about it.
The stove is kind of just in front of the old brick chimney. There’s no landing space, I have no idea how a hood would fit, and it honestly just feels like the range is floating there.
I’m not trying to gut the whole kitchen, but I do want it to feel more intentional and actually work better.
Is it a terrible idea to cover/box in the brick because it has that weird depth difference with the plaster wall? What kind of hood setup would even make sense here? Is more counter space possible?
Open to any and all opinions! I feel like there’s a good solution here, I’m just not seeing it.
New stove in the first picture. Old set up in the second picture.

To me it looks odd. The wall is half brick half dry wall. Could you remove the drywall to the left ?
I’d cover it or remove the half plaster wall. Removing the plaster would be easier and I think either way would look good so it’s kind of your preference.
Also your kitchen looks crowded. I’d get rid of that trash compactor and put your stove in front of that window.
Hoods need to vent outside, assuming going through a chimney will be a problem there. The next option would be an over the stove microwave which can vent through the front.
