A night with 6 birth year wines and matching food

A night with wines for birth years of our group. Blessed to have these in one night.

Bollinger was amazing with a nice bubble and much complexity

Rieussec was interesting with honey, spices and dried orange peel but after a few hours mostly lost.

The three Bordeaux wines needed an hour or so to open up but especially the Latour was so complex with of course the tertiary flavors but still some fruit as well. Wine of the night.

Cheval Blanc was more sharp and took some effort to love initially but improved a lot over the night.

The Niepoort was amazing with cheeses. Cork gave a lot of issues but the wine still was very good with hardly any sediment.
