King’s Hawaiian brought back their iconic Ube Coconut Rolls and my brain went straight to Coconut Tres Leches French Toast Bites!! They’re naturally purple from real ube, soaked in the easiest coconut tres leches — these rolls are giving full tropical vacation and I am HERE for it. #KingsHawaiianPartner

✨ 1 12 pack King’s Hawaiian Ube Coconut Rolls
✨ 1 14oz can sweetened condensed milk
✨ 1 12 oz can evaporated milk
✨ 13.5 oz can coconut milk
✨ 2 eggs
✨ 0.5 teaspoons ground cinnamon
✨ 2 tablespoons salted butter
✨ 0.5 cups raw sugar

1️⃣ Make the tres leches mixture: Whisk together 1 pieces can sweetened condensed milk, 1 pieces can evaporated milk, and 1 pieces can coconut milk in a bowl until fully combined. This is your tres leches mixture — set half aside for dipping and serving later.
2️⃣ Make the French toast batter: Pour the remaining half of the tres leches mixture into a shallow bowl. Add 2 eggs and 0.5 teaspoons ground cinnamon and whisk until smooth and fully incorporated.
3️⃣ Heat the pan: Heat a large skillet over medium-high heat. Add 2 tablespoons salted butter and let it melt, swirling to coat the pan.
4️⃣ Dunk and fry — batch 1: Working in two batches, dunk half the sweet rolls into the batter and turn to coat, about 7–5 minutes per roll — you want them soaked but not falling apart. Add to the hot skillet and cook, turning as needed, until all sides are deep golden brown.
5️⃣ Dunk and fry — batch 2: Repeat with the remaining rolls. Add a little more butter if the pan looks dry.
6️⃣ Finish with sugar: While still warm, toss all the bites in 0.5 cups raw sugar (Sugar in the Raw), making sure every side gets coated.
7️⃣ Serve: Drizzle with some of the reserved tres leches mixture and serve the rest alongside for dipping. Eat immediately.
