Today I cook a massive beef rib rack the old French way — in a deep earth oven, with fire and time.
In rural France, I put this piece of meat into a traditional earth oven and leave it there for hours.
This is not kitchen cooking.
Just fire cooking — buried, sealed, and slowly breaking down with heat and fat.
No rush. No tricks.
Just meat, fire, and time.
In the end — soft, falling apart, full of juice.
What you’ll experience :
• 🔥 Beef cooked for hours in a deep earth oven
• 🔥 Real outdoor fire cooking in rural France
• 🔥 Slow breakdown of meat with heat and fat
• 🔥 Natural fire sound — wood, heat, and dripping fat

Thank you for watching 🔥
I hope I managed to convey the atmosphere of this night.
What’s your favorite way to cook beef ?
Bonjour
I enjoy watching. Used to live in the country in California. Miss those days when we could cook large portions.
Now live outside Phoenix Arizona basically a city . Just enjoy it ! Hopefully many others can watch you . My French is pretty bad even with two years of it in college. Merci!
Oh my, that looks superb 😊
Greetings from Australia, so good to watch, I like your channel because I learn more about slow cooking. Have a lovely weekend. 😊
Okei. I must start getting ready for my kamado grill… That meat looks amazing! Huh…
Those ducks… 😂 When do they get to sleep? Do they wait until you get inside?
Poor neighbors… They surely know when you make your magic with fire and meat.
By the way… The ducks, you give them names?
And, thank you again! Beautiful moment. I like.
Bon jour Madame…. que lindo video, cada vez tienes mas seguidores al canal!! me alegro mucho, un beso..
I am inspired to grill this weekend , fantastic content !
Thank you! That’s an interesting way to finish off the ribs. I usually just smoke them but I’ll have to try finishing them in a braise next time.
I should add, you’re living my dream. The country, geese, chickens, orchards what more does a person need. You’ve got it figured out!
que daria por estar contigo en esa noche tan maravillosa, carne exquisita, vino y hermosa dama, gracias por compartir tu día valiente.
OK, haha…you just got me "hooked"! Maybe, not your intention….But, this has a profound "Ides of March" feel to it? Very much liking your style! Either way, this will make me question how I cook a standing rib roast forever! Would love to see how you clean that "deep earth oven". Anyways… Love it! Keep these coming!
Hello, I enjoyed this and yes you captured the nigh beautifully and OMG the ribs, I need those lol. Great work, so delicious.
Jimmy🥰
❤🍷🌹Thank You
It's very impressive to see your cooking. But you don't list out the herbs & spice of your ingredients as you do the marinating. So, I can't follow your programs 😢
