Dough
· 500 g flour
· 20 g fresh baker’s yeast (or 7 g active dry yeast)
· 60 g sugar
· 160 ml lukewarm water
· 1 unsweetened yoghurt (about 125 g) or 100 ml milk
· 1 tsp vanilla extract (or 1 sachet vanilla sugar)
· Pinch of salt (≈4 g)
· 100 g chocolate sticks (or chocolate batons)
· 150 g cold butter (for rolling)
Glaze
· 1 egg yolk
· 1 teaspoon vinegar
Roll the final dough into a large rectangle (about 4‑5 mm thick). Cut into rectangles, place chocolate sticks, roll up. Let proof until puffy.
Glaze & bake in preheated oven at 200C for 25 minutes.
