Ingredients
6oz chicken breast
1 tsp olive oil
1 large onion
2 tsp Worcestershire sauce
1/2 cup chicken broth
1/2 thyme
1/4 tsp garlic powder
Salt + Pepper to taste

For the melt
2 slices sourdough bread
1/2 cup fat free shredded mozzarella
1 tsp Dijon mustard

Directions: Heat skillet over medium heat add oil. Put in onion slices and salt. Cook 5-6 minutes. Add in Worcestershire sauce with chicken broth, thyme, garlic powder. Simmer 3-5 minutes until reduced.

You can cook the chicken in advance or push the onions to one side and add chicken. Season it the way you like. Cook to internal temperature 165. Shred the chicken in the pan and mix with the onions.

Lower heat to medium push the chicken onion mixture into an even mound. Pour the cheese on. Spread Dijon mustard on the bread and place on top of the chicken mix. Cover for 3-4 minutes until cheese melts. Carefully flip the melted cheese using a spatula.

Toast the bread for 2-3 minutes uncovered until it is crisp and golden. Top with parsley flakes or fresh if you have it. Enjoy this just like I did!
