The venue for the fourth programme is La Riviera, a fine dining restaurant in Inverness. Owned by multi-millionaire Barry Larson and costing ยฃ8,000 a week to run, the place boasts top French chef Loic Lefebvre and an impeccably-trained kitchen staff with Michelin star-studded backgrounds. Loic is on a mission to bring sophisticated French cooking to the home of haggis, tatties and deep-fried Mars bars.

I've worked in construction most of my adult life, some fifty years. Recently worked with a young man, Martin. For whatever reason, he and I were goofing around one morning,, and I told him I was gonna make his life a living hell. He actually laughed at me. You don't do that in Canadian construction. I'm like, what the fuck did you just say to me? He told me he immigrated from Paris, and trained under a chef in a French kitchen. I, in my younger days, also worked under a chef. A Canadian one. I laughed and told him I understood, and he wins. My worst would have been Tuesday for him, lol.
