Brilliant as always Andy 👍. Fav thing for me in Scotland is chips with beef mince gravy maybe some cheese on it. Yum. The mix with mighty car mods, did not expect that. Epic
Carne Asada fries is one of the best mexican-american dishes. Delicious carne asada over top of crispy thick "chips" with a bit of onion and hot sauce……..so divine

"Don't worry it won't taste like vinegar" when the best if not the only condiments to go on chips are salt and vinegar.

As a kiwi I think you missed out a home grown classic, kumara chips, also taro chips are good but what really takes the crown is duck fat chips, so rich and creamy!

One of the best ideas I've ever had was saving the braising liquid from beef barbacoa and turning it into a gravy to have with chips plus some cheese.
The pub next to me adds bacon bits and grilled chicken to their Poutine and it's amazing. One of the best things i've eaten, but it's their gravy blend that makes it. Regional like you said.
There are too many of those inventions to name of in the Netherlands. Noteworthy ones are Kapsalon like mentioned below, Patatje Oorlog (fries topped with mayo, peanut sauce and diced onion), Friet Stoofvlees (fries topped with beef and beer stew). Currently due to harvest and conditions, they're literally giving away potatoes in the Netherlands, so opportunity has never been better.

You know what upsets me? When they get in the car, they have at least 7-8 cameras rolling. No idea how many mics they have. And its like 8 cameras are way too much. And they're selling this as if it's totally normal. Andy, how many cooks do you have behind the scenes that just pre cook stuff for you?
