• unsalted butter – 50 g (1.8 oz)
• vegetable oil – 15 ml (1 tbsp)
• all-purpose flour – 15 g (1 tbsp)
• dry white wine – 150 ml (0.6 cup)
• beef or chicken broth – 1 L (4.2 cups)
• fresh baguette – 1 pc
• hard cheese (Gruyère or Swiss) – 150 g (5.3 oz)
• granulated sugar – 5 g (1 tsp)
• salt & black pepper – to taste

Chef’s Tips:
🔹 The Maillard Masterclass: Do not rush the onions. True caramelization takes time. The sugar is added only midway through to help the onions achieve that signature dark amber color and complex sweetness.
🔹 Deglazing Secret: When pouring the white wine, ensure the pan is hot. The loud “fizz” and steam release the browned bits (fond) from the bottom, which is the soul of the soup’s flavor.
