    Ingredients:
    • Milk – 1 liter (chilled)
    • Almonds – 15-20
    • Cashews – 10
    • Pistachios – 10-12
    • Melon seeds (magaz) – 2 tbsp
    • Poppy seeds (khus khus) – 1 tbsp
    • Fennel seeds (saunf) – 1 tbsp
    • Cardamom (elaichi) – 4-5 pods
    • Black peppercorns – 6-8
    • Dried rose petals – 1 tbsp
    • Honey – 2 tbsp (or to taste)
    • Crushed mishri (rock sugar) or regular sugar – 3 tbsp (adjust to taste)
    • Saffron strands – a pinch
    • Ice cubes – as needed

    Method:
    1. Soak almonds, cashews, poppy seeds, fennel seeds, and melon seeds for at least 1 hour.

    2. Grind the Dry Fruits & Spices:
    • On a sil-batta (or in a grinder), crush almonds, cashews, pistachios, melon seeds, poppy seeds, fennel, cardamom, and black pepper into a coarse paste. Add a little water if needed.
    3. Mix with Chilled Milk:
    • In a large bowl or jug, add the chilled milk.
    • Stir in the ground paste until fully combined.
    4.. Sweeten the Thandai:
    • Add honey and crushed mishri (or sugar) to the milk. Stir well until dissolved.
    5.. Serve Cold:
    • Add plenty of ice cubes for an extra chill.
    • Garnish with a few saffron strands, crushed pistachios, or rose petals for a festive touch.
