Slow-caramelised onions cooked in butter, simmered in rich beef broth with wine and herbs, then topped with toasted baguette and melted cheese.

🥣 Ingredients
🧅 Main Ingredients

5–6 large yellow onions, thinly sliced
3–4 tbsp butter
1 tbsp olive oil (optional)
1 tbsp flour
1–1.5 litres beef stock / beef broth
½ cup dry white wine (optional but traditional)
1 tbsp brandy or sherry
1–2 sprigs fresh thyme (or ½ tsp dried)
Salt — to taste
Black pepper — to taste

🍞 For the Topping
Baguette slices (toasted)
Gruyère cheese, grated or sliced
Optional: Emmental or Comté cheese mix

🍲 Instructions (short version)
Caramelise the onions slowly until deep golden brown.
Add flour, wine, and brandy, then pour in the beef broth and thyme.
Simmer until rich and aromatic.
Serve in oven-safe bowls with toasted baguette and cheese, then grill until melted and golden.
