INGREDIENTS – for 12 – 240g of warm milk – 2 and 1/2 tsp of dried yeast – 100g salted butter melted – 2 eggs – 100g brown sugar – 1 tsp maldon salt – 600g bread flour (plus an extra 50g of need be!) For the filling – 200g brown sugar – 3 tsp cinnamon – 100g butter at room temperature To brush over generously – 3 tbsp milk METHOD 1. Warm up the milk for 1min in the microwave and add the yeast to it. Then the eggs, sugar, butter and salt. 2. Add the flour to the bowl of the electric mixer with the hook attachment and pour over the liquid mix. 3. Knead on low/ medium speed for 10min. Add extra flour if dough is too wet. 4. Proof for 2h in an oven off with a bowl of boiling water on the side inside to create some steam. 5. Make the filling but mixing it all together to a paste. 6. Roll the dough to a big rectangle and spread the filling. Roll tightly and use some dental floss to cut the rolls easily. 7. Place the roll inside a greased tin or individual ramekins. Leave to proof for 1h. 8. Brush generously with the milk and pour over the rest of it. Cook at 190C fan oven for 25 min. Cover with a clean tea towel to keep the steam and moisture in.
