🍷 Coq au Vin Recipe

Ingredients:

1 whole chicken (cut into pieces)

150g bacon (chopped)

2 cups red wine (preferably Burgundy)

1 cup chicken broth

2 cloves garlic (minced)

1 onion (chopped)

2 carrots (sliced)

200g mushrooms

2 tbsp tomato paste

2 tbsp flour

2 tbsp butter

1 tbsp olive oil

Fresh thyme & bay leaf

Salt and pepper

Instructions:

Season the chicken with salt and pepper.

Heat olive oil in a large pot and brown the chicken pieces on all sides. Remove and set aside.

In the same pot, cook the bacon until crispy. Add onion, garlic, carrots, and mushrooms. Cook until softened.

Stir in tomato paste and flour, cooking for 1–2 minutes.

Pour in the red wine and chicken broth, stirring well.

Add the chicken back to the pot along with thyme and bay leaf.

Cover and simmer on low heat for about 1–1.5 hours until the chicken is tender.

Stir in butter at the end for a rich, glossy sauce.

Serve hot with bread or mashed potatoes.
