Tom reveals one of the worst kept secrets of his pub kitchen. There are French influences everywhere. There are French-style dishes on the à la carte menu, like today’s special dessert; Plum Clafoutis with Raspberry Sorbet. The staff have French job titles, like sous chef and chef de partie. And the language in the kitchen is peppered with French words and phrases like ‘oui chef’. To prove that French food earns its place on the menu of a traditional British pub, Tom makes a French onion soup, a hearty cassoulet-style stew and a plum frangipane tart. Bon appétit!
