1 white onion diced
1/2oz unsalted butter
200ml dry white wine
1.25cups demi glacé
1tsp sugar
1Tbsp Dijon
2oz cornichons small diced
-Sweat onion in butter
-Add wine, reduce by 2/3rd
-Add Demi glacé and sugar
-Cook 10 minutes until thickened
-Strain, add Dijon and cornichon
-Enjoy
