Amanda had to leave France very suddenly for a family situation, so this week’s video looks a little different.

While things are okay, we’re taking you along for a quieter few days in Connecticut. Exploring Fairfield County and making a simple corn chowder.
Back to our French château very soon.

Simple Corn Chowder Recipe (Impromptu!)
Serves: 4–6
This chowder is even better the following day

Ingredients:
8 slices bacon (optional, for garnish)
2 tbsp butter
1 medium onion, diced
3 stalks celery
2 cloves garlic, minced
Fresh thyme & dill to taste
2 TBS flour
3 cups roasted or grilled corn (fresh or frozen)
2 medium Yukon gold potatoes, diced
1/2 c dry white wine
3 cups vegetable stock
1 cup whole milk
1 cup heavy cream
Salt & pepper, to taste

Instructions:
Cook bacon until crisp. Set aside, keep a little of the fat in the pot if desired
Over medium heat, add butter until melted
Sauté onion, celery, thyme & garlic until soft
Sprinkle flour over vegetables and cook for several minutes until flour is slightly golden
Increase heat and add white wine, stirring until mostly evaporated
Add potatoes and stock. Simmer 10–15 minutes until potatoes are tender
Lightly smash part of the soup for a thicker texture (optional)
Lower the heat and add corn, milk and cream. Simmer gently (don’t boil)
Season with salt & pepper, and add fresh dill
Serve topped with crispy bacon, grilled bread or oyster crackers

  3. So happy you and your daughter are back home with Lincoln. I hope she makes a full recovery and is fighting fit soon. The chowder looks delicious. Very envious of your knife skills. As a protected late life child I wasn’t allowed near a sharp knife until I started work at 15. 😂😂😂😂😂 over 60 years later I can still hear my mothers voice when I pick up a knife😂

Amanda … Our #HuntingtonFamily settled in Connecticut in 1633 … One of our ancestors, Samuel Huntington, signed the Declaration of Independence and lead the Continental Congress, and later was a Governor of Connecticut for a decade. I lived in West Haven and New Haven while in college. Our best wishes for your daughter … we hope she makes a full recovery.

  9. Hey you're 'French' (almost) cream, butter and milk, particularly when organic and raw is wonderful for our health and now the latest research backs it up. Perhaps you can't find the same quality in the US. So the chowder is a healthy dish. All the best with your daughter's health.

  14. The Northeast US has had a harsh winter that seems to be stubborn about leaving. Sorry you needed to experience some of it… but Stamford does look like a lively place. I'm envious that you're able to afford Whole Foods. I certainly can't!
