Total sugar: 75 g (3.5 tablespoons).

Mix everything together.

Pour the yeast mixture into a bowl with flour.
Knead the dough with a spatula.

Add the beaten eggs to the bowl with the dough.
Knead the dough with a spatula.
The dough will be sticky.
Knead the dough until smooth.

120 g soft butter.
Add 1/3 of the butter to the dough.
Knead the dough with a spatula.
Add the butter in batches.
It’s best to use a mixer for this dough.

However, you can also knead the dough by hand.
You’ll need more patience.

I don’t recommend kneading this dough by hand.
The dough will stick to your hands.
The dough is very sticky, but don’t worry about the result.
The bread will turn out incredibly soft and airy.

Gather the dough in the center of the bowl.
Cover the dough with plastic wrap.
Let the dough rest in a warm place for 30 minutes.

After 30 minutes:
The dough has changed.
The dough has become more elastic.
Knead the dough with a spatula.
Round the dough.
Cover the dough with plastic wrap.
Let the dough rest in a warm place for 1 hour.

Prepare the baking pan.
Grease the baking pan with vegetable oil.

After 1 hour:

Dust the countertop with flour.
Place the dough on the countertop.
Form the dough into a ball.
Divide the dough into 6 pieces.
The dough is sticky.
Form each piece into a ball.
Dust the dough with flour or dip your hands in flour.
Place the dough balls in the baking pan.

    Make Sponge
    100 ml Milk, warm
    25 g Sugar
    5 g Dry yeast
    Mix everything well.
    Add 4 Tbs of flour.
    Mix all together.
    Cover the bowl with a kitchen towel.
    Place it in a warm place for 30 min.

    Make Dough
    Mix the remaining ingredients:
    375 g Flour (minus 4 Tbs), sifted
    75 g Sugar (minus 25 g)
    1/2 tsp Salt

    Add the sponge mixture.
    Mix the ingredients with a spatula.
    Lightly beat 3 eggs with a whisk,
    Add the beaten eggs to the mixture.
    Mix into a dough with a spatula.
    It will be sticky, continue to mix
    until the dough is smooth.

    Add 120 g soft butter to the dough in batches.
    Use Mixer or knead the dough by hand and
    shape into a ball. Easier using Mixer.
    Let it rest covered in a warm place, for 30 min.

    Dough will be more elastic after rest.
    Knead the dough again and shape into a ball.
    Let it rest covered in a warm place for 1 hour.

    Transfer the dough to a floured counter
    and shape it again into a ball.
    Divide the dough into 6 pieces.
    Shape each piece into a small ball.
    Flour your hands and transfer the brioches
    to baking pan lined with parchment paper.
    Cover the brioches with a kitchen towel.
    Let them rest in a warm place for 30 minutes.

    Whisk 1 egg with 1 tablespoon of milk.
    Brush the brioche tops with the mixture.

    Bake in preheated oven at 180°C (428°F)
    for 30-35 minutes.
    Oven settings: top and bottom heat.
    Let it cool, before storing.

  5. If you have a mixer use it. I use the paddle for 5 minutes first, add eggs one at time until well combined, than softer butter a spoon tablespoon at a time till well combine than 5 more minutes for 20 minutes total. Sometimes the top browns to much, do cover with foil to prevent burning to much. Oh I scrape everything out with a spatula from the poolish to the butter.
