Tournedos Rossini is the pinnacle of French haute cuisine: decadent, rich, and an absolute flavor bomb. While it usually requires truffles, this version replaces them with sweet, glazed shallots and fresh chives. It’s a rustic yet luxurious twist that allows you to enjoy this masterpiece all year round.

Ingredients (Serves 4)
– 4 Tournedos (Beef Tenderloin steaks)
– 4 slices of fresh Duck or Goose liver (1.5cm thick)
– 4 slices of Brioche (cut into circles)
– 3 large shallots, finely diced (brunoise)
– 250ml high-quality Veal Fond
– 100ml high-quality Madeira wine
– 200g butter (keep some ice-cold for the sauce)
– Fresh thyme & chives
– Fleur de sel & black pepper

The Process
1. The Croutons: Fry brioche circles in plenty of butter until golden.
2. The Steaks: Season and sear in a hot pan (1 min per side). Add butter and thyme to baste. Transfer to a 60°C oven for 20–25 mins (target internal temp: 50-52°C). Keep the pan!
3. The Sauce: Sauté shallots in the meat pan. Deglaze with Madeira, reducing by half. Add veal fond and simmer until thick. Off the heat, whisk in ice-cold butter for a glossy finish.
4. The liver: Sear in a smoking hot dry pan for 45 seconds per side until custardy inside.
5. Assembly: Place steak on the crouton, top with foie gras, spoon over the shallot-Madeira sauce, and finish with a “rain” of chives.
