If you like a good onion soup, you will love this chicken recipe. Fall off the bone chicken cooked in caramelized onions. Take it to the next level, serve on top of toasted baguette and melted cheese. You will need:
5-6 drumsticks
2 chicken breasts
8-9 large sweet onion
113 g butter Plus 2 tbsp olive oil
1/4 cup olive oil to sear the chicken
3 cloves of garlic
1 tbsp sugar
Salt to taste
1 tbsp Worcestershire sauce
1/2 cup white wine
2 tbsp all purpose flour
2 cups chicken stock
For assembly:
1 French baguette
For the butter spread,
1/2 stick butter
1/4 tsp salt
1/4 tsp garlic finely minced
1/4 tsp red pepper flakes
1/4 tsp finely chopped parsley
*cheese of your choice, you can use Gruyère and Parmesan, or fontina, Swiss or Comte cheese.
Preparation method:
Chop roughly 8-9 onions and cook on low heat adding a generous amount of butter. Add a tbsp of sugar at the beginning and give it time to cook and caramelize. This process will take 50 minutes to an hour.
Meanwhile heat sone oil in a different skillet, sear the chicken on both sides until golden, remove and set aside.

When the onion is ready, add the garlic, white wine, Worcestershire sauce and flour. Add 2 cup of chicken stock. Now put back the chicken, adjust the seasoning, cover and cook at 375 degrees F for an hour or an hour and a half or until super tender and golden.
Now slice you baguette the way you like. Mix the butter with garlic and rest of seasoning, brush the baguette and toast until buttery, crispy and golden. Load with chicken pieces, onions and cheese. Broil to perfection and serve immediately. What a great dish that was, we truly enjoyed every single bite.
