Leeks might just be one of the most underrated vegetables.
When they’re baked like this, they turn soft, sweet and silky, soaking up a creamy garlic, thyme and Dijon sauce with golden bubbling cheese on top.

When I’ve watched other people prepare leeks (I haven’t very much myself but I really want to try this) they chop them up and soak them in water to remove sand. How did you wash these before cooking?
