Ingredients (Serves 4)
Chicken
• Bone-in, skin-on chicken thighs – 6 pieces | 900 g | 2 lb
• Salt – 1 tsp | 6 g
• Black pepper – ½ tsp | 2 g
• Olive oil – 1 tbsp | 15 ml
Caramelised Onion Sauce
• Onions (thinly sliced) – 3 large | 600 g
• Butter – 2 tbsp | 28 g
• Garlic (minced) – 4 cloves | 12 g | 1 tbsp
• Sugar – 1 tsp | 4 g
• Fresh thyme – 1 tsp | 1 g (or ½ tsp dried)
• Worcestershire sauce – 1 tsp | 5 ml
• Dry white wine or sherry – 60 ml | 4 tbsp
• Beef stock – 240 ml
• Balsamic vinegar – ½ tsp | 2–3 ml
• Dijon mustard – ½ tsp | 3 g
Cheese Topping
• Gruyère cheese (grated) – 120 g | 1 US cup | ¾ UK cup
(Swiss, Emmental, or Jarlsberg also work well)
• Mozzarella (optional for stretch) – 60 g | ½ US cup | ⅓ UK cup
Finish
• Fresh parsley (chopped) – 2 tbsp | 8 g

Bake at:
180°C / 350°F for about 25 minutes
Back in until golden and cheese melted

  1. Oooooh!!! That’s a great play on the French onion soup! Love grèyere cheese in many recipes! I’m afraid if I mess with this recipe instead of making my famous French onion soup that I might get my butt kicked! 😂🤣
