I found the technique, which is says they used at Claridges, in his autobiography from 2007.

  6. Absolute bollocks. This whole process took you 45 mins minimum and a whole load of faff and cleaning. Buy a chicken oil and season and bung it in the oven. Takes no more than an hour to cook and two min max to prep. Done.
