French Onion Mac n’ Cheese 🧅🧀🔥
All done in one pot! Use a pot that can go from the stove to the oven please (no plastic handles).
Ingredients
• 2 tbsp butter
• 2 large onions, thinly sliced
• 1 tsp sugar (optional, helps onions caramelize)
• 2 cups beef (or veggie broth)
• 1½ cups half-and-half cream
• 2 cups dry curly pasta (cavatappi / fusilli / gemelli)
• Salt + black pepper, to taste
• 1½ cups gruyère, shredded
• ½ cup white cheddar
***if you don’t like the above cheese, use ones you like!
Crispy Topping
• ½ cup panko
• 2 tbsp melted butter
• 2–3 tbsp finely grated parm or gruyère
How
1️⃣ Melt butter in an oven-safe pot. Add onions + a pinch of salt and cook low and slow 20–25 min until deeply caramelized. Add sugar if they need help browning.
2️⃣Pour in broth, milk, pasta. Bring to a gentle simmer.
→ Cover for 5-6 minutes, then uncover and stir occasionally until the pasta is tender and the sauce becomes creamy from the pasta starch.
3️⃣ Turn off heat. Stir in the gruyère + cheddar until melted and glossy. The sauce should look slightly loose.
4️⃣ Mix panko, melted butter, parm, and black pepper. Sprinkle extra parm over the pasta, then add the panko topping.
5️⃣ Remove the handle and bake at 425°F (220°C) for 8–12 minutes until golden and bubbling.
Creamy underneath. Crispy on top.

I got distracted while caramelizing the onions 🧅 so don’t be like me and add the broth/cream before they brown too much 😭
