I used 8 chicken thighs, browned in butter and olive oil, then built the sauce with mushrooms, shallots, celery, Yukon gold potatoes, Dijon, thyme, and fresh tarragon instead of rosemary.
It starts on the stovetop and finishes in the oven until creamy and rich.
Because the casserole has so much flavor, I kept the sides simple — roasted asparagus and rolls.
