Roasted Chicken Provencal

INGREDIENTS
8 chicken thighs – trimmed of overhanging fat
salt and pepper – to taste
2 tablespoons herbes de Provence – divided
1/2 cup (65g) all-purpose flour – for dredging only
3 tablespoons (45ml) olive oil
3/4 cup (180ml) vermouth or dry white wine
1/2 cup (120ml) low-sodium chicken stock
4 large shallots – peeled, cut in half
1/2 cup (70g) pitted kalamata olives
1/2 cup (70g) pitted Sicilian green olives
4 large marinated artichoke hearts – patted dry of excess oil and halved, (use a 12 or 16 ounce jar if you can’t find large artichoke hearts)
1 large lemon – halved
1 tablespoon (14g) unsalted cold butter – cubed

  1. I made this chicken over a year ago, with NO OLIVES of course. The recipe I used also didn't have artichokes. I had to buy the seasoning online. this meal is delish~

  11. Got the cook book finally. My daughter ordered it for Christmas lol. Book is great but I still love the videos. I have made many of them and all the ones I have tried have been hits. I tend to make the pasta ones the most and one of our absolute favorites is the creamy lemon and Parmesan chicken and pasta one. When its all dished out I scrape the pan clean and eat the leftover sauce lol.

  13. This is a beautiful dish to serve out family style, very impressive! I love those flavors, sometimes I'm hesitant with the herbes de Provence because of the lavender, but I see it being perfect here! I'm sure this would be a 10 for me!

  15. I think people feel that home cooking isn’t necessarily low calorie but more healthy than eating out or having prepared food.
    It’s easy to see that some of these dishes are definitely higher calorie but it’s flavor that we’re looking for. Thanks for sharing!

  16. Just a quick note on the cookbook; I’ve given 2 out with housewarming packages/gifts and they were received very well. I was afraid that a printed copy would go unused, but an 50-something old mensch like me was proven wrong. Keep up the great cooking team 😊

  17. All the Asian grocery stores near me have the best shallots, and generally the widest and best variety of fruits and vegetables. If there are any near you, check them out.
