I have to try spatchcock now. My toaster oven is tiny compared to Mom's big old oven to fit a 27lb turkey. But I think it might fit if I cut it like that. Hopefully. Gotta test this. It's pretty much everything I use on my whole roasted chicken, except the cream. I use a ton of butter though, and veg in the cavity and under. Thinking I'll like this even better, maybe a little parm or something?
